Do you have a list – When I have all the time in the world I would like to do….?-list. And I mean the domestic kind of projects, like painting, redecorating, cooking that difficult and time consuming recipe…. Well, I have one, in my head actually, not written down…
And today I did one of those things: home made sun dried tomatoes!
Step by step
Mini Roma tomatoes *use the best quality available*
Cut the tomatoes in half
Place them, cutting edge up, on a baking tray
Sprinkle sea salt on top
Place them in a pre-heated oven 200 C for 2,5 hours
Rinse out the jars you're going to use
Make sure that the hot steam can escape, open oven door slightly
Ready tomatoes are leathery, but non-sticky
Get some herbs- I've used garlic, rosemary and chili
Add olive oil
After a week ready to eat, and best to use within four weeks after first opening!
